Chocolatey Avalanche Bars.

It may be April, but as far as I'm concerned... it's summer. 

Today I had iced coffee for breakfast. Like.. just iced coffee. At 6 AM. Totally a thing. 

I bought a bright buttercup-yellow tank top. I drove with the windows down and the Katy Perry up. I daydreamed about tropical beaches, the scent of Pirates of the Caribbean/Splash Mountain waterfalls, flowy, flowery dresses, pancakes/waffles/my face with coconut syrup, and streaking my hair sunkissed-blond. I baked Rice Krispie treats that took six hours to set in this spring heat. My boyfriend texted me, "What do you want for dinner?", and my first thought was, "Churros. Ice cream. No, definitely funnel cakes."

I wish I was joking.
So... summer! Melty chocolate, baking without ovens, and lazy camera-phone photography. It's a thing and it's nothing to be ashamed of.
Also, let's be real. Rice Krispies + marshmallows + white chocolate chips + mini chocolate chips + peanut butter is never going to = a bad thing. 
... except that's not just any kind of peanut butter. 

It's this stuff. 
Made of dark chocolate and peanut butter and dreams. 

Basically a perfect match for rich, white chocolate crispy squares and funnel cake dinners. 
Get into it!

Chocolatey Avalanche Bars 


12 ounces white chocolate chips
1/4 cup creamy peanut butter 
3 cups Rice Krispies cereal
1 1/2 cups mini marshmallows
1/4 cup mini chocolate chips + extra to sprinkle over the top

Spray a 9x9-inch baking dish with cooking spray; set aside.

In a large microwave-safe bowl, heat white chocolate chips for 1 minute. Stir, then continue microwaving for 30 seconds at a time, stirring after each increment, until chips are melted.

Stir in the peanut butter and Rice Krispies. Let cool for 15 minutes, stirring every five minutes.  

Stir in the marshmallows and chocolate chips. 

Pour mixture into prepared baking dish and spread evenly, pressing lightly with the back of a wooden spoon (but not too much or they'll get hard). 
Sprinkle a handful of mini chocolate chips over the top and press them down lightly. 

Cut into squares when completely cooled, swoon, and enjoy!

This looks amazing! Cannot wait to try it! And I wish I felt like Summer here - in the UK there has been rain everyday for the last 2 weeks! I want to wear summer dresses and eat ice cream but no suc luck! I'm sure these bars will brighten any day though! Thanks

OMG I just bought this chocolate dreams stuff last week at the grocery store. Its an amazing alternative (and healthier one too) to nutella... :) Can't wait to try this recipe out!

So, I found your blog, yesterday... I pinned like 97% of the recipes... And I read the whole thing. YOUR WHOLE BLOG. I read it all, to the very beginning. It was amazing. And I think I gained 15lbs. That's okay, I don't really blame YOU... But, wow. Great blog! :)

Also, this recipe looks AMAZING.
These look nifty. It occurs to me, that if I'm leaving the Marshmellows whole, I'm toasting them under the broiler on a parchment sheeted pan first. Toasted Marshmellllllowsssss. Also, must find awesome dark chocolate peanut butter.

Well, these were fantastic, note to self and everyone for that matter, Toasting the marshmellows under the broiler works fabulous for the flavor, a better method of removing them from the parchment would be nifty, will probably spray it first next time, as they stuck, but even so, they mixed into this in large blobs and the toasty taste was good. These were ready to eat in less then 30 minutes, 15-20 to prep, and a quick 5-10 minute freezer trip to being cut. With a single bowl and 1 9x9 dish to clean. Microwave only, these could be made just about anywhere.
Oh, also, Peanut Butter and Co. stuff is distributed to WalMart, so was easy to get the Dark Chocolate Dreams. They also make a white chocolate one. I need it to be in a cookie.
I made these last night. And they are completely gone. :)
I am really desperate to eat these bars and I am sure that they are going to be taste so good that any one is unable to resist. I really want to thank you for sharing the recipe for these bars.
