How to Make Homemade Brown Sugar.

Imagine the prettiest, richest, most delicious, decadent slice of fudgey chocolate cake that you can, covered in whipped clouds of vanilla-malt frosting, and lots and lots of chocolate sprinkles.

... that was supposed to be today's post.

I'm sorry. Are you hungry too? There really is cake in my kitchen (... and snickerdoodles... and monkey bread), but the layers came out crooked, the vanilla frosting came out chocolate and in the end it was, well, basically this cake.

Which is why I'm giving you sugar today. Brown sugar! We're going to make it!
I know. Who does that? Who makes brown sugar?

Better question: who doesn't. Who doesn't like brown sugar? I used to eat it with a spoon when I was kid. That probably explains a few things.
This was fun and easy and kind of blew my mind a little. The flavor of fresh, homemade brown sugar doesn't even compare to store-bought brown sugar, especially in cookies or on top of oatmeal. It's... deeper? Richer. Better! And this is all you need:
Trust me. Try this. Two ingredients, ten minutes, perfect in a pinch, and the best part of all, besides feeling awesome all day (you just made. sugar.) is you get to control how light or dark the sugar is by how much molasses you add! Fancy!
And it's so fluffy!
I'm sorry. I had to. It's been stuck in my head all day.

Homemade Brown Sugar

1 cup granulated sugar
1-2 tablespoons molasses (depending on how dark you want it)

In a medium bowl, add molasses to sugar and mix with a fork or using a stand mixer fitted with a whisk attachment, working up to high speed, until no big clumps of molasses remain. This'll take several minutes.

At this point I thought, right. Brown sugar. Uh-huh. Not going to happen. Trust me. Keep mixing! 
And mixing!
Aaaaand mixing. If you need to, you can stop and smash the molasses lumps with a fork a little.
Almost there!
Don't worry if you still have tiny lumps of molasses in your sugar. I did. They were tasty.
And that's it! It's magic. Store it in an airtight container. Do a little dance. It's that easy. Brown sugar. Do it. You'll need it for Thursday's recipe.

Love it! I live in Egypt where brown sugar is hard to find and about 10 times more expensive than white sugar. I received this tip from a friend of mine here in Egypt some time ago and have been making it ever since. By the way, molasses can be found anywhere here and is dirt cheaper - also called 'black honey' locally ;)

You're a genius! It has never crossed my mind that I could make brown sugar. I love this stuff, I sprinkle it on everything! Thanks for giving me a reason to buy molasses :)
This is great for getting your hands on brown sugar in a pinch, but otherwise, it doesn't make a whole lot of sense to buy a product that's specifically had its molasses removed only to add it back again.

Thanks for the tutorial. My friend says brown sugar is so much more expensive than white sugar too. I'm not sure if Molasses is pricey too but I love the tip.

I love homemade options of pricey ingredients and use make buttermilk substitute (1 cup whole milk + Tbs white vinegar) all the time in place of real buttermilk. I mean, I'd love the real thing but sometimes a girl's just gotta improvise.

I recently found a gorgeous way of making homemade mascarpone so tiramisu here I come!

I have not "bought" brown sugar for years...I use the blade and food processer and have brown sugar in moments.... I did the math and If you usually have mollasses on hand for bakeing ( and I do) its a lot cheaper then buying brown sugar by the box.
This is so fun! I guess I knew what brown sugar was made of, but never thought of making it myself. Why not? Fun blog, fun writing. Thanks for sharing!
I am diabetic, so I tried this with half sugar and half Splenda with the molasses. I used my Cuisinart as well. It worked out great. Thanks so much for the inspiration.

place a crust of bread in your brown sugar container to keep the sugar from getting hard / a slice of apple works too but if left in the sugar too long it gets gooey

Just finished making some of this. I used my Kitchenaid mixer with the whisk attachment & it turned out great! Took about 5 mins. on med-high. Please measure the brown sugar after you make it because I ended up with a bit more than 1 cup (probably due to air being incorporated into it) & yes, I did measure correctly. Thanks so much for the recipe!
I LOVE this post! Bikinis are stupid, I love that movie sooo much, and it is so much cheaper to make your own brown sugar. Costco has 10 pound bags of organic white sugar right now, and it comes out to .89 cents a pound! Wow, make your own brown sugar and brag to all your friends!

One of my favorite things ever is brown sugar and butter (or margarine), I'm not picky. Turns out my grandmother used to put that mixture in cheesecloth and give it to me to suck on when I was whiny as a baby! She called it a "sugar titty". My grandmother kills me.
